Thyme is an aromatic perennial herb used in cooking, medicine and as an ornamental. Its intensely pungent flavour goes well with most meat dishes, including chicken and wild fowl. Thyme is hardy and can withstand long cooking times, making it ideal for flavouring slow-cooked dishes such as stews and casseroles. It is one of the main ingredients in bouquet garni, along with parsley and bay leaves. Thyme also pairs well with other strong herbs such as rosemary and sage.
