Berries
The berries are widely used in Persian cuisine, for example in rice pilafs (known as zereshk polo) and as a seasoning for poultry. Due to their naturally sour taste, they are sometimes cooked with sugar before being added to rice. In Iranian markets, zereshki are sold dried. In Russia, they are sometimes used in jams (especially mixed berry jams), and their extract is often used in soft drinks and candies.
