Anise has a sweet and strongly aromatic flavor, characterized by its distinctive aftertaste. The seeds, both whole and ground, are used to make tea and herbal infusions (either alone or in combination with other aromatic herbs). Anise is a common ingredient in many regional and ethnic sweets, including black jelly candies, British aniseed candies, Italian pizzelle, German Pfeffernüsse, Austrian Anisbögen, Dutch muisjes, and New Mexican bizcochitos.

Anise also plays an important role in drinks, such as the Mexican atole de anís and champurrado (a drink similar to hot chocolate). It is often consumed as a digestive aid after meals in Pakistan and India. In ancient Rome, spicy cakes flavored with anise seeds called mustachoes were served at the end of feasts, a tradition that eventually led to the custom of offering wedding cakes.
