"Carrots are full of antioxidants, and so are pitted olives, a star of a healthy Mediterranean diet. If slicing carrots lengthwise seems too laborious or complicated, you can grate them or thinly slice them into coins. Fleshy green olives are delicious in this salad, although any olives, including oil-dried black ones, will add a nice salty, savory note to the mix."
